breakfast burritos

This recipe was given to me by my sister a couple of years ago and it has remained a favorite brunch recipe since then. We love how filling and easy these burritos are; they take 15 minutes to make and keep you full for hours. 
You need:
  • 1/2 Potato
  • 1/2 Onion
  • 1Tomato
  • 2 Eggs per person
  • 2 slices of Bacon
  • 1 Tortilla per person
  • Grated Cheddar Cheese

Slice the onions and potatoes thinly and sauté them in a tablespoon of olive oil. Whisk the eggs and add them to the onion/potato skillet. Scramble the eggs with tomatoes, cheese, and cooked bacon. Add everything to a warm tortilla and enjoy!
